Mr. 1969 woke up and took the boys to the Thanksgiving Day parade.
Me? I’m cooking!
So last night, I finished baking the ham and I finished making my Italian Beef Roast.
Typically I slice all of the meat up so I can arrange everything on a serving platter. I hate cluttered tables…LOL

Too bad I don’t eat meat anymore because that used to be one of my favorites *sniff*.
I half cooked my greens yesterday so I would only need to cook them for half the time today. Plus greens taste soooo much better when they sit overnight.
The turkey is already in the oven.
I brined him overnight and he was all plumped up and ready to go. I seasoned him up, stuck pats of butter under his skin, let him rest on a bed of celery, filled him up with fresh sage, rosemary, oranges and poured a small amount of chicken stock in the bottom of the roasting pan. (That helps to keep the bird moist as he cooks.) Near the finish line, I will glaze him with my maple glaze…..YUMMY.

That turkey is going to be bursting with flavor. All of it sounds good.
We cooked yesterday, ALL day, especially those greens because they do taste better a day later.
